Box Mix Apple Cake Slow Cooker

Ingredients

Pressure/Manual (High) Natural/Quick Release

  • vegetable oil
  • 2 red apples, cored and very thinly sliced
  • 2 teaspoons apple pie spice or ground cinnamon
  • 1 (7-ounce) package muffin mix
  • ½ cup whole milk
  • 2 cups water
  • 1 tablespoon sugar

Method

  1. Lightly oil a 6 x 3-inch round metal pan
  2. Layer the apple slices in the bottom of the pan and up the sides a little, overlapping the slices
  3. Sprinkle the apple pie spice on the apples
  4. Prepare the muffin mix according to the package directions, using the milk for the liquid
  5. Pour the batter over the apples
  6. Cover the pan with aluminum foil
  7. Pour the water into the Instant Pot
  8. Place a steamer rack in the pot
  9. Place the pan with the apples on the rack
  10. Secure the lid on the pot
  11. Close the pressure-release valve
  12. Select MANUAL and set the pot at HIGH pressure for 20 minutes
  13. At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
  14. Carefully transfer the cake to a wire rack
  15. Remove and discard the foil
  16. Let the cake cool for 5 to 10 minutes
  17. Place an oven rack about 4 inches from the broiler
  18. Preheat the broiler
  19. Use a knife to loosen the sides of the cake from the pan and invert the cake onto a broiler-safe plate
  20. Sprinkle the cake with the sugar
  21. Broil until the sugar is melted and caramelized, 2 to 3 minutes
  22. To serve, cut the cake into four pieces and serve hot, or allow to cool before serving
