Apricot Vanilla Keto Mug Cake Recipe

Ingredients

If you are on a VERY strict Keto diet, you may want to share with a friend, especially if you decorate it:

  • 1 egg
  • 1 tablespoon apricot unsweetened baby food
  • 1 tablespoon oil
  • 1/8 teaspoon vanilla extract
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 4 tablespoons granulated sweetener
  • 2 tablespoons sugar-free instant vanilla pudding powder unprepared
  • 4 tablespoons almond flour (1/4 cup)

Method

  1. Grease the mug lightly with butter, margarine, oil or cooking spray
  2. Use a small bowl to mix ingredients
  3. Beat the egg with a fork then mix in the rest of the liquid ingredients
  4. Add the dry ingredients and mix well
  5. Pour the batter into the mug, no more than halfway
  6. Smooth the top with a spoon if you intend to frost your apricot vanilla mug cake
  7. Place a damp cloth on the work surface and bang the mug gently but firmly five or six times to remove air bubbles
  8. Put the mug on a small plate in the microwave and your keto mug cake is ready to bake
  9. Cook your keto mug cake for 3 to 4 mins according to your microwave and personal taste
  10. Is it done? Insert a small sharp knife into middle of the mug cake
  11. If the knife comes out clean, the mug-cake is done
  12. Wait 2 mins, then use a blunt knife to loosen the mug cake and turn it onto plate
  13. Position the mug cake so that the slightly rounded top is on top
  14. Your Apricot Vanilla Keto Mug Cake should look a bit like a large muffin
  15. Variation: Frost the Keto Mug Cake with apricot jelly, or carefully cut the mug cake in two, and frost each half individually
