Baileys Irish Cream Chocolate Cheesecake Recipe

Ingredients

For Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/3 cup powdered sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup butter
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups white sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons all-purpose flour
  • 3 eggs
  • 1/2 cup sour cream
  • 1/4 cup Bailey’s Irish cream liqueur

Method

  1. Preheat oven to 350F
  2. In a medium bowl, combine cookie crumbs, powdered sugar, cocoa powder and butter
  3. Press into the bottom of a greased, 9 inch springform pan
  4. Bake for 10 minutes
  5. Set aside
  6. Increase oven temperature to 450F
  7. In a large mixing bowl, beat together cream cheese, sugar, cocoa powder and flour until smooth
  8. Add eggs one at a time until just combined
  9. Blend in sour cream and Bailey’s Irish Cream
  10. Pour into crust
  11. Bake for 10 minutes
  12. Reduce heat to 250F and continue to bake for an additional 60 minutes
  13. Cool, cover and chill overnight
  14. Garnish suggestion – chocolate shavings and crushed chocolate cookie crumbs
