Banana Fritters With Caramel Sauce Recipe

Ingredients

Makes 4 to 6 servings

  • 3 ripe bananas, mashed
  • 2 tablespoons pure maple syrup
  • 2 tablespoons sugar
  • 1/3 cup plain or vanilla soy milk
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon vegan margarine, melted
  • canola or other neutral oil, for frying
  • caramel sauce, homemade or store-bought

Method

  1. In a large bowl, combine the bananas, maple syrup, sugar and soy milk
  2. Stir in the flour, cinnamon, salt and baking powder, then mix in the margarine until well blended
  3. In a large skillet, heat a thin layer of oil over medium-high heat
  4. When the oil is hot, carefully place spoonfuls of the banana mixture into the skillet
  5. Do not crowd
  6. Fry until golden brown on one side, then turn and fry the other side, about 6 to 8 minutes total
  7. Drain the cooked fritters on paper towels
  8. Arrange the fritters on dessert plates and drizzle with caramel sauce
  9. Serve warm
