Ingredients
SERVES 3 to 4 – Cooker: 5- to 7-quart – Time: 8 minutes at HIGH pressure
- 1 cup steel-cut oats
- 3 tablespoons butter
- ½ teaspoon salt
- 3 to 3½ cups water, depending if you want a looser oatmeal
Method
- Combine the ingredients in a 5- to 7-quart pressure cooker
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 8 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 15 minutes
- At time, if the pressure is not all released, open the valve
- Be careful of the steam when you remove the lid
- Spoon out the cooked grain to a serving bowl to serve immediately
- Top with milk, half-and-half, nondairy milk, almond milk, fresh fruit (sliced strawberries or peaches, grated apple), dried fruit (such as dried cranberries, blueberries, raisins, or cherries), ½ cup pumpkin puree, chopped raw or toasted nuts (macadamia nuts, almonds, or pecans), seeds (sunflower or pumpkin-not salted), granola, sweetener of choice such as brown sugar, maple syrup, honey, agave syrup, or Splenda
