Blueberry-Peach Crisp Recipe

Ingredients

Makes 8 servings

  • 4 fresh ripe peaches, peeled, pitted and cut into 1/4-inch slices
  • 2 cups fresh blueberries
  • 1 tablespoon cornstarch
  • ¾ cup sugar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 3 tablespoons vegan margarine

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a 9-inch square baking pan and set aside
  3. In a large bowl, combine the peaches, blueberries, cornstarch, 1/4 cup of the sugar, lemon juice and 1/2 teaspoon of the cinnamon
  4. Mix gently and spoon into the prepared baking pan
  5. Set aside
  6. In small bowl, combine the flour, oats, margarine, the remaining 1/2 cup sugar and the remaining 1/2 teaspoon cinnamon
  7. Use a pastry blender or fork to mix until crumbly
  8. Sprinkle the topping over the fruit mixture and bake until the top is browned and bubbly in the center, 30 to 40 minutes
  9. Serve warm
