Bourbon Baked Squash Recipe


Makes 4 servings

  • 2 small acorn or other round winter squashes, halved lengthwise and seeded
  • 4 teaspoons vegan margarine
  • 4 teaspoons sugar
  • 4 teaspoons bourbon
  • 1/4 teaspoon ground allspice
  • salt and freshly ground black pepper


  1. Preheat the oven to 375°F
  2. Lightly oil a 9 x 13-inch baking pan
  3. Arrange the squash halves in the prepared pan, cut side up
  4. Into each squash cavity place 1 teaspoon each of the margarine, sugar and bourbon
  5. Sprinkle each with allspice and season with salt and pepper to taste
  6. Cover tightly with foil and bake until tender, about 45 minutes
  7. Serve immediately
