Brandied Fruit Slow Cooker Recipe

Ingredients

  • 560g pineapple chunks, undrained
  • plums, pitted and cut into pieces
  • 2 apples, cored and cubed
  • 2 pears, cored and cubed
  • ½ cup (65 g) dried apricots
  • 1/3 cup (75 g) brown sugar
  • ¼ cup (55 g) unsalted butter, melted
  • ¼ cup (60 ml) brandy
  • 2 tbsps (19 g) pearl tapioca, crushed

Method

  1. Combine fruit in slow cooker
  2. In a small bowl, combine remaining ingredients
  3. Pour over fruit and stir
  4. Cover and cook on low for 3½ to 4 hours
  5. Yield: 12 servings
  6. Per serving: 114 g water; 129 calories (29% from fat, 2% from protein, 69% from carb)
