  • olive oil spray.
  • 2/3 cup chopped red onion
  • 1 red bell pepper, seeded and diced
  • 1 pound lean ground turkey, at least 93% lean
  • 2/3 cup all-purpose whole wheat flour or oat flour
  • 2 teaspoons baking powder
  • pinch of sea salt.
  • 1 egg
  • 2 egg whites
  • 11/4 cups unsweetened almond milk
  • 2 teaspoons dried thyme
  • pinch each of sea salt and black pepper.
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/3 cup shredded reduced-fat mozzarella cheese
  • cracked black pepper.
  • garnish: avocado mash or guacamole, your favorite cheeseburger condiments and toppings (e.g., pickles, mustard, ketchup, bbq sauce).

Method

  1. Preheat the oven to 350°F
  2. Spray a 9-by-13-inch baking dish-or even muffin pan-with olive oil spray
  3. Spray a nonstick skillet with olive oil and set over medium heat
  4. Add the onion and bell pepper and cook for 3 to 5 minutes, until the edges are seared but not burned
  5. Add the ground turkey and cook, breaking it up with a wooden spoon until it is no longer pink, 8 to 10 minutes
  6. Set the meat aside and allow it to cool
  7. In a large bowl, mix together the flour, baking powder, and salt
  8. Set aside
  9. In a separate bowl, whisk together the egg, egg whites, almond milk, thyme, salt, and pepper
  10. Slowly add the wet ingredients to the dry ingredients, stirring along the way to ensure that it is all mixed together
  11. If the batter is too thick, add almond milk 1 tablespoon at a time
  12. Fold in the majority of the cheddar and mozzarella cheeses, saving the remaining portion :For the top of the casserole
  13. Spread the turkey mixture evenly over the bottom of the prepared baking dish, then pour in the batter, ensuring that it’s evenly distributed
  14. Add the remaining cheese to the top, along with a little cracked pepper
  15. Bake for about 25 to 30 minutes, or until the egg is fully cooked
  16. Divide into four equally sized portions-or more if you’re making for children-garnish with your favorite cheeseburger toppings, and enjoy with a plate of grilled veggies
