Buttercream Frosting Recipe

Ingredients

Makes about 3 cups

  • 1 cup vegan margarine
  • 4 cups confectioners sugar
  • 2 tablespoons plain or vanilla soy milk
  • 1 1/2 teaspoons pure vanilla extract

Method

  1. In a large bowl, cream the margarine with an electric mixer on high speed until light and fluffy
  2. Add the sugar, soy milk and vanilla and mix until thoroughly combined
  3. Continue mixing for about2 minutes, until the frosting is smooth and stiff
  4. Store leftovers covered in the refrigerator for 3 to 4 days
