Carrot Bread With Cranberries Walnuts Recipe

Ingredients

Makes 1 loaf

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup light brown sugar
  • ¾ cup plain or vanilla soy milk
  • 1/3 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups finely shredded carrots
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup chopped walnuts

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a large bowl, mix the flour, baking powder, cinnamon, allspice, ginger and salt
  4. Set aside
  5. In a separate large bowl, combine the sugar, soy milk, oil and vanilla
  6. Add the carrots, cranberries and walnuts and mix until well combined
  7. Add the wet ingredients to the dry ingredients, stirring until just blended
  8. Scrape the batter into the prepared pan
  9. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour
  10. Cool at least 15 minutes before removing from the pan
  11. Cool on a wire rack for 30 minutes before slicing
