Chicken Vegetable Soup With Noodles Slow Cooker Recipe

Ingredients

  • 320 g chopped onion
  • 260 g sliced carrots
  • 200 g sliced celery
  • 280g frozen peas
  • ¼ teaspoon black pepper
  • ½ teaspoon basil
  • ¼ teaspoon thyme
  • 2 tbsps (2.6 g) parsley
  • 475 ml water
  • 3 pounds (1.3 kg) chicken, cut-up
  • 1 cup (160 g) uncooked egg noodles

Method

  1. Place all ingredients in slow cooker except chicken and noodles
  2. Remove skin and any fat from chicken pieces
  3. Then place chicken in cooker on top of the rest of the ingredients
  4. Cover and cook on high 4 to 6 hours
  5. One hour before serving, remove chicken
  6. Cool slightly
  7. Cut meat from bones
  8. Return meat to cooker and add noodles
  9. Cover and cook on high 1 hour
  10. Yield: 6 servings
  11. Per serving: 421 g water; 382 calories (18% from fat, 57% from protein, 25% from carb)
