Chickpea Spinach Cauliflower Curry Indian

Ingredients

  • Serves: 6
  • 2 cups baby spinach, chopped
  • 15 oz can chickpeas
  • 1/2 tbsp curry powder
  • 1 tbsp garam masala
  • 1 cup vegetable broth
  • 14 oz can coconut milk
  • 1 sweet potato, peeled and diced
  • 2 cups cauliflower florets
  • 2 cups can tomatoes, chopped
  • 1 tbsp ginger, minced
  • 1 garlic clove, minced
  • 1/2 onion, chopped
  • 1 tsp vegetable oil
  • 1 tsp salt

Method

  1. Heat oil in the pan over medium heat.
  2. Add ginger, garlic, and onion to the pan and saute for 5 minutes.
  3. Add pan mixture into the slow cooker with remaining ingredients except for spinach.
  4. Cover and cook on low for 6 hours.
  5. Add spinach and stir well.
  6. Serve with rice and enjoy.
