Chickpea-Tomato Wraps Recipe


Makes 4 wraps

  • 1 1/2 cups cooked or 1 cans chickpeas, drained and rinsed
  • 1/2 cup oil-packed sun-dried tomatoes, drained*
  • 1 celery rib, minced
  • 1/4 cup minced red onion
  • 3 tablespoons chopped fresh parsley
  • 1/2 cup vegan mayonnaise
  • 1 tablespoon spicy brown mustard
  • salt and freshly ground black pepper
  • 4 (10-inch) flour tortillas or lavash flatbread
  • 4 lettuce leaves


  1. Mash the chickpeas in a large bowl
  2. Cut the tomatoes into 1/4-inch pieces and add to the chickpeas along with the celery, onion and parsley
  3. Add the mayonnaise, mustard and salt and pepper to taste, stirring to mix well
  4. To assemble wraps, place 1 tortilla on a work surface and spread about 1/2 cup of the chickpea mixture across the surface
  5. Top with a lettuce leaf
  6. Roll up tightly and cut in half diagonally
  7. Repeat with the remaining ingredients and serve
