Chilled Fruit Soup Recipe

Ingredients

Makes 4 servings

  • 2 cups white grape juice
  • 2 cups pear nectar
  • 1 ripe banana, chopped
  • 1 tablespoon fresh lemon juice Pinch salt
  • 1/2 cup unsweetened coconut milk (optional)
  • 1 cup blueberries
  • 1 ripe mango, peeled, pitted and cut into 1/4-inch dice
  • 1 cup diced pineapple 1 cup diced strawberries
  • fresh mint leaves, for garnish

Method

  1. In a food processor, combine the grape juice, pear nectar, banana, lemon juice and salt
  2. Process until smooth, then pour into a large bowl
  3. Stir in the coconut milk, if using
  4. Cover and refrigerate until well chilled, for 3 hours or overnight
  5. Ladle the chilled soup into bowls and spoon 1/4 cup each of the blueberries, mango, pineapple and strawberries into each bowl
  6. Garnish with mint leaves and serve
