Citrus Pastry Souffle Recipe
Ingredients
Filling:
- 8 oz. cream cheese
- 15 oz. ricotta cheese
- 2 egg yolks
- 1 tbsp sugar
- 1 tsp vanilla
Pastry.:
- 1/2 C. butter, softened
- 1/3 C. sugar
- 6 eggs
- 1 C. all-purpose flour
- 2 tsp baking powder
- 1 1/2 C. Greek yogurt
- 1/2 C. orange juice
Garnish.:
- fresh sweetened fruit (berries)
Method
- Set your oven to 350 degrees F before doing anything else and grease a 9x13x2-inch glass baking dish
For the filling: in a small bowl, add the cream cheese and beat until smooth
- Add the egg yolks, ricotta cheese, sugar and vanilla extract and mix until well combined
For Blintz.in a large bowl, add the butter and sugar and beat until creamy
- Add eggs and beat until well combined
- In a third bowl, mix together the flour and baking powder
- In a fourth bowl, mix together the yogurt and orange juice
- Add alternately into the egg mixture and mix until well combined
- Place half of the mixture into the prepared baking dish and top with the filling mixture evenly
- Place the remaining mixture over the filling evenly
- Cook in the oven for about 45-55 minutes
- Remove from the oven and keep onto a wire rack to cool for about 15 minutes before cutting
- Serve with fresh sweetened fruit
