Citrus Pastry Souffle Recipe

Ingredients

Filling:

  • 8 oz. cream cheese
  • 15 oz. ricotta cheese
  • 2 egg yolks
  • 1 tbsp sugar
  • 1 tsp vanilla

Pastry.:

  • 1/2 C. butter, softened
  • 1/3 C. sugar
  • 6 eggs
  • 1 C. all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 C. Greek yogurt
  • 1/2 C. orange juice

Garnish.:

  • fresh sweetened fruit (berries)

Method

  1. Set your oven to 350 degrees F before doing anything else and grease a 9x13x2-inch glass baking dish

For the filling: in a small bowl, add the cream cheese and beat until smooth

  1. Add the egg yolks, ricotta cheese, sugar and vanilla extract and mix until well combined

For Blintz.in a large bowl, add the butter and sugar and beat until creamy

  1. Add eggs and beat until well combined
  2. In a third bowl, mix together the flour and baking powder
  3. In a fourth bowl, mix together the yogurt and orange juice
  4. Add alternately into the egg mixture and mix until well combined
  5. Place half of the mixture into the prepared baking dish and top with the filling mixture evenly
  6. Place the remaining mixture over the filling evenly
  7. Cook in the oven for about 45-55 minutes
  8. Remove from the oven and keep onto a wire rack to cool for about 15 minutes before cutting
  9. Serve with fresh sweetened fruit
