Classic Tabbouleh Recipe


Makes 4 servings

  • 2 cups water
  • 1 cup medium-grind bulgur
  • salt
  • 3 ripe plum tomatoes, finely chopped
  • 1/2 cup minced red onion
  • 1/2 cup chopped cucumber
  • ¾ cup minced fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice Freshly ground black pepper


  1. In a large saucepan, bring the water to boil over high heat
  2. Stir in the bulgur and lightly salt the water
  3. Cover, remove from heat and set aside until the bulgur softens and the water is absorbed, about 20 minutes
  4. If any water remains, drain it off, pressing out any remaining moisture
  5. Transfer the cooked bulgur to a large bowl and add the tomatoes, onion, cucumber and parsley
  6. Add the olive oil and lemon juice
  7. Season with salt and pepper to taste and toss well to combine
  8. Cover and set aside for at least 20 minutes before serving
