Chicken And Peas In White Wine

Ingredients

Yield : 4 servings

  • 8 pieces of chicken , skin and bone on
  • salt and black pepper
  • 2 bulbs of garlic , peeled
  • 2 Tablespoons flour
  • 1 cup white wine
  • 1 cup chicken broth
  • 2 cups frozen green peas

Method

  1. Using a cast iron skillet or any other heavy bottomed pan that is at least 8-9 inches across that you have, start heating up your pan on medium heat
  2. Season the chicken pieces with salt and black pepper
  3. Put skin side down in the skillet and leave it completely alone for at least 5 minutes
  4. On medium heat, this should render some of the fat out of the skin and give you a nice golden brown color
  5. Turn the chicken and cook for an additional five minutes
  6. Take the chicken out for a couple of minutes and put the garlic cloves in the pan
  7. Cook them until they are slightly browned but not dark
  8. Once the garlic is browning, add the flour into the pan and stir until it is absorbed by the oil
  9. If the chicken if very lean, you can add in some oil or butter
  10. Add the wine and the chicken broth to the pan
  11. Put the chicken back in, skin side up
  12. Simmer on your stovetop for 20 minutes on medium heat
  13. Stir in the peas, and continue to cook for another 3-5 minutes
