Creamy Cauliflower Recipe


Makes 4 servings

  • 1 medium head cauliflower, cut into florets
  • 1/4 cup plain unsweetened soy milk
  • 2 tablespoons vegan margarine ¾ teaspoon salt
  • 1/4 teaspoon ground cayenne
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons minced fresh chives or green onions
  • 1/4 teaspoon smoked paprika


  1. Preheat the oven to 350°F
  2. Lightly oil a 2-quart casserole and set aside
  3. Steam the cauliflower until tender, 12 to 15 minutes
  4. Rinse the cauliflower under cold water and drain well
  5. Transfer the steamed cauliflower to a food processor
  6. Add the soy milk and margarine and process until smooth
  7. Add the salt, cayenne, nutmeg and chives and puree until blended
  8. Transfer the mixture to the prepared casserole and sprinkle with paprika
  9. Bake until hot, about 20minutes
  10. Serve immediately
