Crock Pot Chicken Veggie Kale Soup Slow Cooker Recipe

Ingredients

  • 6 boneless, skinless chicken thighs
  • 3 1/2 cups of homemade chicken bone broth
  • 1/2 of a large white onion, chopped
  • 4 large cloves of garlic, smashed
  • 1 1/2 cups shredded carrots
  • 4 cups of chopped kale
  • 1 1/2 tsp parsley
  • salt and pepper to taste

Method

  1. Rinse the whole chicken thighs then place this in the crock pot
  2. Layer with onions then add broth and garlic
  3. Cook this on low for 4 to 6 hours just when the chicken starts to come apart
  4. Separate the chicken with a fork to turn it into chunks
  5. Add the other ingredients and cook for another hour
