Crock Pot Fiery Mandarin Chicken Slow Cooker Recipe

Ingredients

For the chicken:

  • 6 chicken thighs
  • 1 tbsp Chinese Five Spice Powder
  • 1/2 tsp kosher salt

For the sauce:

  • 1 cup no sugar added mandarin orange slices
  • 1 tsp minced garlic
  • 1 tbsp minced ginger
  • 1/2 tsp sliced red chilis or red
  • pepper flakes
  • 1 tbsp lime juice
  • 1 tbsp granulated sugar substitute
  • 1 tsp sesame oil
  • 2 tbsp fish sauce
  • 1/2 tsp xanthan gum

Method

  1. Mix the spice powder and kosher salt in a bowl
  2. Season the chicken pieces with the mix
  3. Place the thigh pieces with skin facing the bottom on a heated skillet for about 3-4 minutes
  4. Flip the pieces onto the other sides and allow to brown for about 2-3 minutes
  5. Lay the browned chicken thighs in the crock pot
  6. Mix all the sauce ingredients excluding the xanthan gum in a bowl
  7. Toss in the sauce over the chicken thighs
  8. Leave on low for about 6 hours or 4 hours on high
  9. Transfer the chicken into a platter
  10. Pour the sauce into a blender and mix in the xanthan gum
  11. Process for about 25 seconds and pour over the thighs
  12. Serve warm and garnish with Cilantro if required
