Crock Pot Honey Sesame Chicken Slow Cooker Recipe

Ingredients

Chicken:

  • 3 lbs. boneless, skinless chicken thighs or breasts
  • sea salt – to taste.
  • freshly ground black pepper – to taste
  • 1 yellow onion, small, peeled and roughly chopped
  • 3 garlic cloves
  • 1/2 cup raw honey
  • 1/3 cup Paleo ketchup
  • 1/2 cup coconut aminos
  • 2 tbsp toasted sesame oil
  • 1/4 tsp crushed red pepper
  • 1 tbsp arrowroot powder (optional)

Veggies:

  • 1 bunch rainbow chard, cut lengthwise into one-inch ribbons
  • 2 cups broccoli, cut into bite-sized pieces
  • 1 red bell pepper, cored and thinly sliced lengthwise
  • 1 tbsp coconut oil
  • 1 tsp coconut aminos
  • 1/2 tsp toasted sesame oil
  • sea salt – to taste.
  • freshly ground black pepper – to taste garnish:
  • 1 tsp sesame seeds
  • 3-4 green onions, thinly sliced

Method

  1. Season the chicken with salt and pepper and place in a crock pot
  2. Place all the other chicken ingredients except the arrowroot powder in the food processor and pulse until the liquid ingredients are well combined
  3. Pour the mixture over the chicken in the crock pot and cook for 3 hours on low
  4. Remove and shred the chicken
  5. Whisk the arrowroot powder in the broth that’s left in the crock pot and cook for 5 minutes
  6. Add the chicken back to it and mix

For the veggies, put coconut oil in a skillet and saute the veggies till the bell pepper and broccoli is tender and chard is wilted

  1. Add the remaining ingredients and mix
  2. Place the veggies in a serving tray and place the chicken mixture on top of it
  3. Garnish with sesame seeds and green onion
