Crock Pot Mediterranean Chicken With Pepperoncini Slow Cooker Recipe

Ingredients

  • 12 pepperoncini peppers, rinsed and drained
  • 1 cup sliced pitted kalamata olives 8 cloves minced garlic
  • 3 1/2 lbs. chicken leg quarters
  • 1 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/2 tsp grated lemon zest
  • 1/2 cup fresh-squeezed lemon juice
  • 1 cup sour cream
  • 1/2 tsp paprika

Method

  1. Place the pepperoncini in a crock pot
  2. Toss in olives and garlic on top
  3. Rinse and pat dry the meat and insert into the crock pot over the other ingredients
  4. Add the seasonings, ½ tsp paprika, lemon zest and the lemon juice
  5. Cover with lid and cook for 6 hours on low until the meat is fork tender
  6. Transfer the cooked chicken onto a plate and leave aside
  7. Turn the cooker onto high and remove the excess fat seen on the surface of the liquid
  8. Add the sour cream and allow to simmer for about 10 minutes
  9. Mix in the paprika and pepper
