Ingredients

  • 1 pound (900 g) extra lean ground beef
  • 1 cup (160 g) chopped onion
  • 1 cup (150 g) chopped red bell pepper
  • ½ teaspoon minced garlic
  • ½ teaspoon black pepper
  • 1 tsp cumin
  • 1 tsp cayenne
  • 1 tbsp (7.5 g) chili powder
  • 700 ml water
  • 1 can (6 ounces, or 170 g) no-salt-added tomato paste
  • 720 g no-salt-added diced tomatoes
  • 1 kg kidney beans, cooked or canned without salt

Method

  1. Brown beef in skillet over medium-high heat
  2. Drain
  3. Combine beef and remaining ingredients in slow cooker
  4. Cover and cook on low 8 to 10 hours
  5. Yield: 8 servings
  6. Per serving: 377 g water; 455 calories (38% from fat, 34% from protein, 28% from carb)
