Croque Madame Recipe

Ingredients

Serves 6

  • 5 tbsps. unsalted butter
  • 3 tbsps. all-purpose flour
  • 2 cups whole milk
  • 1 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan
  • salt and freshly ground black
  • pepper to taste
  • 1/2 tsp freshly grated nutmeg
  • 12 (1/2-inch-thick) slices bread, toasted to golden brown
  • 6 tsps. Dijon mustard
  • 12 thin slices ham
  • 6 large eggs

Method

  1. Melt 3 tbsps. butter in a medium saucepan over medium-high heat. Add the flour and whisk until smooth, about 1 minute. Whisk in the milk and bring to a boil. Reduce heat to a simmer and cook until mixture is thickened, about 6-8 minutes. Remove from the heat and stir in 1/2 cup grated Gruyere and the Parmesan until smooth. Season with salt and pepper and stir in the nutmeg. Set the sauce aside.
  2. Preheat the broiler to high and set the rack 3-4 inches from the heat.
  3. Place 6 slices toasted bread on the baking sheet, and spread 1 tsp mustard over each
  4. top each with 2 slices ham
  5. divide the remaining gruyere among the 6 pieces
  6. broil until cheese is melted, about 1-2 minutes
  7. top with remaining bread slices, then evenly pour the sauce on top of each sandwich
  8. broil until cheese sauce is bubbling and evenly browned, about 2-3 minutes, and remove from the oven
  9. Melt the remaining 2 tbsps butter in a large skillet over medium heat
  10. Add eggs and lower the heat
  11. Season with a pinch of salt and pepper and continue to cook over low heat until the whites become opaque, about 2 minutes
  12. Turn the eggs and cook for 1 minute longer
  13. Place an egg on top of each sandwich to serve
