Crumb-Topped Cod Seafood Recipe

Ingredients

  • 1 pound cod fillets — thawed if necessary
  • melted butter or margarine.
  • 1/4 cup fine dry bread crumbs
  • 1 tablespoon chopped parsley
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly-ground black pepper
  • 1/8 teaspoon paprika
  • lemon wedges.

Method

  1. Cut cod into serving-size pieces
  2. Coat on all sides in about 3 tablespoon melted butter
  3. Place in baking dish
  4. Combine bread crumbs, parsley, seasonings and 1 tablespoon melted butter
  5. Sprinkle crumb mixture over cod
  6. Bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork
  7. Serve with lemon wedges
  8. This recipe yields 4 servings
  9. Recipe may be halved
