Dungeness Crab Newburg Seafood Recipe

Ingredients

  • 3/4 cup sliced mushrooms
  • 1/4 cup finely chopped onion
  • 1/4 cup butter or margarine
  • 3 tablespoons flour
  • 1 1/2 cups half-and-half or milk
  • 2 egg yolks — slightly beaten
  • 5 ounces dungeness crab meat — (about 1 cup)
  • — thawed if necessary
  • 1 tablespoon dry sherry
  • 1 dash cayenne pepper
  • salt
  • patty shells or toast points
  • paprika

Method

  1. Microwave method: Microcook mushrooms, onions and butter in 2 quart microwave safe bowl at high 2-1/2 minutes or until onion is tender
  2. Stir in flour, then half-and-half
  3. Microcook, covered, at medium 6 minutes or until sauce is thickened and bubbly; stir occasionally
  4. Stir a small amount of hot mixture into yolks; return to hot mixture
  5. Stir in crab, sherry and cayenne; salt to taste
  6. Microcook at medium 2 to 3 minutes or until crab is thoroughly heated
  7. Serve in patty shells; sprinkle with paprika
  8. Stove-top method: Saute mushrooms and onion in butter until tender
  9. Stir in flour; cook and stir 1 minute
  10. Add half-and-half; cook and stir about 5 minutes or until thickened
  11. Stir a small amount of hot mixture into yolks; return to hot mixture
  12. Stir in crab, sherry and cayenne; salt to taste
  13. Cook and stir until crab is thoroughly heated
  14. Serve in patty shells; sprinkle with paprika
