Easy Butterscotch Cheesecake Recipe


  • 1-1/2 cups graham cracker crumbs
  • 1/3 cup packed brown sugar
  • 1/3 cup butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 3/4 cup cold, 2% milk
  • 1 package (3.4 ounces) instant butterscotch pudding mix
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 eggs, lightly beaten


  1. Preheat oven to 325F
  2. In a small bowl, combine graham cracker crumbs, brown sugar and butter
  3. Press into the bottom of a 9 inch springform pan
  4. Bake for 10 minutes
  5. Meanwhile, in a separate bowl, whisk together both milks with pudding and let stand for 2 minutes
  6. In a large mixing bowl, beat cream cheese until smooth
  7. Add in pudding mixture and vanilla
  8. Add in eggs until just combined
  9. Pour into crust
  10. Place springform pan in a baking pan filled with 1 inch of water
  11. Bake for 65 to 75 minutes, until center is almost set
  12. Cool, cover and chill overnight
  13. Garnish suggestion – whipped topping and crushed butterscotch candies
