Easy Italian Cheesecake Recipe

Ingredients

  • 1 1/2 pounds ricotta cheese, drained through cheesecloth to remove moisture
  • 2 cups powdered sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon rum flavored extract
  • 1 tablespoon grated lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tablespoon grated orange zest

Method

  1. Preheat oven to 400F
  2. In a medium bowl, combine ricotta, powdered sugar and eggs
  3. Stir in all extracts, lemon juice and both zests until thoroughly combined and creamy
  4. Pour into a greased, 9 inch springform pan
  5. Bake for 40 minutes, until golden
  6. Cool completely
