  • 1 tablespoon olive oil
  • 1 cup uncooked quinoa
  • 5 cups chopped Swiss chard or spinach
  • 2 zucchini, cut into 1/2-inch pieces
  • 2 large carrots, peeled and chopped into 1/4-inch coins
  • 2 celery stalks, chopped into 1/2-inch pieces
  • 11/2 tablespoons minced garlic
  • 1/2 medium red onion, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1 (14-ounce) can navy beans, rinsed and drained
  • 6 cups no-salt-added vegetable stock
  • 1 (14.5-ounce) can crushed tomatoes
  • sea salt and black pepper
  • garnish: chopped fresh basil

Method

  1. Combine all of the ingredients (except the garnish) in a slow cooker
  2. Cook on low for 6 to 8 hours or on high for 4 to 6 hours
  3. Garnish and enjoy this delicious soup as a complete meal
