Fajita Peppers And Onions Recipe


Makes 4 To 5 Servings

This Is Vegan.

  • 1 tablespoon olive oil
  • 1 medium red or yellow onion, thickly sliced
  • 1 large red bell pepper, cut into ¼-inch-wide strips
  • 1 large yellow bell pepper, cut into ¼-inch-wide strips
  • 1 large green bell pepper, cut into ¼-inch-wide strips
  • ¼ teaspoon salt
  • 1 teaspoon minced garlic (1 good-sized clove)


  1. Place a large (10-to 12-inch) heavy skillet over medium heat
  2. After about a minute, add the olive oil and swirl to coat the pan
  3. Turn the heat to high, and add the onion
  4. Cook for 3 minutes, or until the onion begins to soften
  5. Add the bell peppers, salt, and garlic, and cook for about 1 minute
  6. Then turn the heat down to medium, and continue to cook and stir (tongs work best) for only about 5 minutes longer
  7. The peppers should be barely cooked
  8. Serve hot, warm, or at room temperature
