Fresh Cherry Smoothie Recipe

Ingredients

Makes 2 servings

  • 1/3 cup unsalted raw cashews
  • 1 1/4 cups chilled plain or vanilla soy milk or other nondairy milk
  • 1 tablespoon pure maple syrup or agave syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh cherries, pitted

Method

  1. In a high-speed blender, grind the cashews to a fine powder
  2. Add the soy milk, maple syrup and vanilla and blend until smooth
  3. Add the cherries and blend until thick and creamy
  4. Pour into glasses and serve at once
