Fresh Tomato Salad Recipe


Makes 4 servings

  • 2 garlic cloves, crushed
  • 1/4 cup olive oil
  • 2 tablespoons tarragon vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 large ripe tomatoes, cut into 1/4-inch slices
  • 4 to 8 Boston lettuce leaves
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon torn fresh basil leaves


  1. In a small bowl, combine the garlic, oil, vinegar, salt and pepper
  2. Stir until blended
  3. Set aside
  4. Arrange the sliced tomatoes on a large platter or individual plates lined with the lettuce leaves
  5. Sprinkle parsley and basil over the tomatoes and drizzle with dressing
  6. Let the salad rest at room temperature to allow the flavors to mingle, about 10 minutes and then serve
