Fried Double-Corn Grits Recipe

Ingredients

Makes 4 servings

  • 4 cups water
  • 1 cup stone-ground grits
  • salt
  • 1 cup fresh or frozen corn kernels, thawed
  • 2 or 3 green onions, minced Freshly ground black pepper
  • 1/2 cup all-purpose flour
  • canola or grapeseed oil, for frying

Method

  1. In a large saucepan, bring the water to a boil over high heat
  2. Stir in the grits, salt the water and reduce the heat to medium
  3. Simmer, stirring constantly, until the grits are cooked and thickened, about 20 minutes
  4. Stir in the corn and green onions
  5. Season with salt and pepper to taste
  6. Pour the hot grits into a lightly oiled baking dish or loaf pan and smooth the top
  7. Set aside to cool, then cover and refrigerate to chill thoroughly, 2 hours
  8. When the grits are firm, cut into 1/2-inch slices
  9. Dredge the grits slices in the flour, shaking off the excess
  10. In a large nonstick skillet, heat a thin layer of oil
  11. Add the grit slices and cook until golden brown on both sides, about 8 minutes total
  12. Transfer to a plate lined with paper towels to absorb any excess oil
  13. Season with salt and pepper to taste and serve immediately
