Fried Or Soft Tacos Pressure Cooker Recipe

Ingredients

SERVES 4 to 6

  • ½ cup cooking oil such as olive oil or grapeseed oil (for fried tacos)
  • 12 fresh corn tortillas
  • 2 to 3 cups shredded meat or other filling, such as Braised Duck for Tacos (above)

TOPPINGS (YOUR CHOICE)

  • ½ head iceberg lettuce, ¼ of a ball of red or green cabbage, thinly shredded, or coleslaw
  • 1 to 2 ripe tomatoes, diced
  • 1 bunch green onions, trimmed and chopped, or ¼ cup chopped red onion
  • 1 cup salsa of choice, such as Salsa Roja
  • 2 cups grated Jack cheese
  • 1 ripe avocado, peeled, pitted, and sliced or diced, or guacamole
  • hot pepper sauce.
  • sprigs fresh cilantro.
  • 2 limes, cut into wedges

Method

  1. For fried tacos, in a small frying pan, heat the oil over medium-high heat until a drop of water sizzles immediately
  2. One at a time, fry each tortilla lightly on one side
  3. Turn and fry lightly on the other side
  4. Before it becomes crisp, bend it in half with the tongs and a fork to hold it steady to crisp the folded end
  5. Remove from the oil and drain on paper towel
  6. Repeat with the remaining tortillas
  7. For soft tacos, heat the tortillas in the oven or microwave in packs of four until hot and pliable
  8. Depending on the filling, you might want to use two tortillas per taco to keep the filling from falling out
  9. Place 2 tablespoons of filling inside the taco
  10. Add the toppings of your choice, garnishing the plate with a sprig of cilantro and a lime wedge
