Fruited Tapioca Slow Cooker Recipe

Ingredients

  • 2¼ cups (535 ml) water
  • 2½ cups (570 ml) pineapple juice
  • ½ cup (63 g) tapioca pudding mix
  • 1 cup (200 g) sugar
  • 420g crushed pineapple, undrained

Method

  1. Mix first four ingredients together in slow cooker
  2. Cover and cook on high 3 hours
  3. Stir in crushed pineapple
  4. Chill for several hours
  5. Yield: 6 servings
  6. Per serving: 241 g water; 267 calories (1% from fat, 1% from protein, 98% from carb)
