Garden Veg Multigrain Sandwiches Recipe

Ingredients

Makes 4 sandwiches

  • 1 pound extra-firm tofu, drained and patted dry
  • 1 medium red bell pepper, finely chopped
  • 1 celery rib, finely chopped
  • 3 green onions, minced
  • 1/4 cup shelled sunflower seeds
  • 1/2 cup vegan mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 slices whole grain bread
  • 4 (1/4-inch) slices ripe tomato
  • 4 lettuce leaves

Method

  1. Crumble the tofu and place it in a large bowl
  2. Add the bell pepper, celery, green onions and sunflower seeds
  3. Stir in the mayonnaise, salt, celery salt and pepper and mix until well combined
  4. Toast the bread, if desired
  5. Spread the mixture evenly onto 4 slices of the bread
  6. Top each with a tomato slice, lettuce leaf and the remaining bread
  7. Cut the sandwiches diagonally in half and serve
