Gin and Tonic Spanish Recipe

Ingredients

• 4 ounces hendrick’s gin or other top-quality gin, plus a bit more
• 4 ounces top-quality tonic water or more to taste (see tip)
• 2 strips lemon zest
• 1 teaspoon dried juniper berries

Method

1. Fill 2 8-ounce rocks glasses three-quarters full of ice
2. Pour 2 ounces of gin over the ice in each glass
3. Top each with about 2 ounces of tonic water
4. Twist the peel over the ice to release its oils, then rub the rim with the peel and drop it into the glass
5. Drop in a few juniper berries and, holding your thumb over the opening of the gin bottle, float a tiny layer of gin on top
