Ginger-Peach Chutney Recipe

Ingredients

Makes about 2 cups

  • 6 firm peaches
  • 1 cup golden raisins
  • 1 cup sugar
  • 1/4 cup apple cider vinegar
  • 3 tablespoons chopped shallot
  • 2 tablespoons grated fresh ginger
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 1/2 cup water

Method

  1. Immerse the peaches in a saucepan of boiling water for about 30 seconds to loosen the skin
  2. Remove the peaches from the water and submerge them in a bowl of ice water
  3. Peel, pit and chop the peaches and set aside
  4. In a large saucepan, combine the raisins, sugar, vinegar, shallot, fresh ginger, ground ginger, crushed red pepper, salt and water and bring to a boil over medium heat, stirring frequently
  5. Cook for 5 minutes
  6. Reduce the heat to low and add the chopped peaches
  7. Cook until the mixture thickens, stirring frequently, about 30 minutes
  8. Cool to room temperature
  9. Remove the chile and discard before serving
  10. If not using right away, spoon the chutney into a container with a tight-fitting lid
  11. Cover and refrigerate until needed
  12. Properly stored, this chutney will keep for up to 1 week
