Halibut Chowder Seafood Recipe

Ingredients

  • 2 pounds halibut — thawed if necessary
  • 1/2 cup onion — finely chopped
  • 1/2 cup green bell pepper — finely chopped
  • 1/2 cup celery — finely chopped
  • 1/2 cup carrots — finely chopped
  • 6 tablespoons butter or margarine — divided
  • 3 cups chicken broth
  • 3/4 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 cups milk
  • 3 tablespoons flour
  • 2 1/2 cups shredded sharp cheddar cheese
  • 1 tablespoon minced parsley

Method

  1. Remove skin and bones from halibut; cut into bite-sized pieces
  2. Saute vegetables in 3 tbsp butter
  3. Add halibut, chicken broth, salt and pepper
  4. Simmer covered, 5 minutes
  5. Add milk and heat gently
  6. Combine remaining 3 tbsp butter with flour and add to chowder
  7. Cook and stir until slightly thickened
  8. Add cheese; cook and stir over low heat until cheese melts
  9. Sprinkle with parsley
  10. Makes 6 to 8 servings
