Hearty Cod Chowder Seafood Recipe

Ingredients

  • 1 1/2 pounds cod fillets — thawed if necessary
  • 1 cup onion — chopped
  • 1 cup zucchini — chopped
  • 1 clove garlic — minced
  • 1/4 cup oil
  • 1 can tomatoes — (15 oz.)
  • 2 cups tomato juice
  • 1/3 cup dry white wine or water
  • 3/4 teaspoon salt
  • 3/4 teaspoon basil — crushed
  • 1 generous dash bottled hot pepper sauce

Method

  1. Cut cod into large chunks
  2. Combine onion, zucchini, garlic and oil in 3-1/2 quart microwave proof dish
  3. Microwave, covered, at high 4 minutes or until onion is tender
  4. Add tomatoes, tomato juice, wine and seasonings
  5. Microwave, covered, at high 4 minutes or until boiling
  6. Add cod
  7. Microwave, covered, at high 4 minutes; stir
  8. Microwave covered, at high 4 to 6 minutes longer or until cod flakes easily when tested with a fork
