Herb Basted Whitefish Seafood Recipe

Ingredients

  • 1 pound pollock fillets
  • — or cod or rockfish fillets
  • 2 tablespoons butter or margarine
  • 2 tablespoons dry white wine or fish stock
  • 1 tablespoon thyme — crushed
  • 1 tablespoon marjoram — crushed
  • lemon slices

Method

  1. Cut fish into serving sized pieces
  2. Melt butter; add remaining ingredients except lemon
  3. Place fish in shallow microwave safe dish; baste generously with butter mixture
  4. Arrange lemon slices on fish
  5. Microcook, covered with wax paper, on high for 3 minutes
  6. Rotate dish 1/4 turn
  7. Baste with butter mixture
  8. Microcook, covered, on high for 1 to 2 minutes longer or until fish flakes when tested with a fork
