Hollandaise Sauce Recipe


Makes 1 CUP

  • 3 large egg yolks
  • 1 tsp lemon juice
  • 1/4 cup dry white wine
  • 1 tsp chopped shallots
  • 1/2 cup unsalted clarified butter
  • 1/2 tsp salt


  1. Whisk together the egg yolks and lemon juice and set aside
  2. Place a stainless bowl over a saucepan containing barely simmering water (or use a double boiler)
  3. The water should not be touching the bottom of the bowl
  4. Add the white wine and shallots and cook until liquid is reduced to 2 tablespoons
  5. Strain out the shallots and return the liquid to the heat
  6. Whisk in the egg yolk mixture
  7. If the eggs get too hot and start to break, remove the pan from the heat and whisk a few drops of cool water into the mixture
  8. Continue whisking until the mixture is thickened and doubled in volume
  9. Remove the mixture from the heat
  10. Add a few drops of the melted butter, whisking it in quickly to emulsify
  11. Drizzle in the remaining butter, whisking continuously until it’s all incorporated
  12. Stir in the salt and serve warm
