Kale Sweet Potatoes Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 small red onion, minced
  • 1 pound kale, thick stems removed and chopped
  • 1 pound sweet potatoes, peeled and cut into 1/2-inch dice
  • 1 1/2 cups vegetable broth
  • salt and freshly ground black pepper

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until softened
  3. Add the kale, sweet potatoes and broth
  4. Season with salt and pepper to taste
  5. Cover and bring to a boil, then reduce heat to medium and cook, partially covered, stirring occasionally, until the vegetables are tender and the liquid has evaporated, about 20 minutes
  6. Serve immediately
