Keto Feta-Spinach Salmon Roast Recipe

Ingredients

  • 3 ounces (85 g) cream cheese, softened
  • 3/4 cup (115 g) crumbled feta
  • 2 scallions, thinly sliced, including the crisp part of the green
  • 1/2 cup (10 g) fresh spinach, chopped
  • 2 skinless salmon fillets of roughly equal size and shape, totaling 3/4 pound (340 g)
  • olive oil.

Method

  1. Preheat the oven to 350°F (180°C, or gas mark 4)
  2. Combine the cream cheese and feta, mashing and stirring with a fork until well blended
  3. Add the scallions and spinach and combine well
  4. Spread the mixture evenly over one salmon fillet
  5. The filling will be about 3/4 inch (2 cm) thick
  6. Top with the second salmon fillet
  7. Brush both sides with olive oil, turning the whole thing over carefully with a spatula
  8. Place the loaf on a shallow baking pan and bake for 20 minutes
  9. Slice carefully with a sharp, serrated knife

Makes 2 servings
