Keto Gratin Of Cauliflower And Turnips Recipe

Ingredients

  • 2 1/2 cups (375 g) turnip slices
  • 2 1/2 cups (375 g) sliced cauliflower
  • 1 1/2 cups (360 ml) low-carb milk
  • 1/4 cup (60 ml) heavy cream
  • 3/4 cup (90 g) blue cheese, crumbled
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon dried thyme
  • guar or xanthan (optional)
  • 1/4 cup (25 g) grated Parmesan cheese

Method

  1. Preheat oven to 375°F (190°C, or gas mark 5)
  2. Combine the turnips and cauliflower in a bowl, making sure they’re pretty evenly interspersed
  3. In a saucepan over lowest heat, warm the low-carb milk and heavy cream
  4. When its hot, add the blue cheese, pepper, salt, and thyme
  5. Stir with a whisk until the cheese is melted
  6. Its good to thicken this sauce just slightly with guar or xanthan
  7. Spray a casserole dish with nonstick cooking spray
  8. Put about one-third of the cauliflower and turnip slices in the dish and pour one-third of the sauce evenly over them
  9. Make two more layers of vegetables and sauce
  10. Sprinkle the Parmesan cheese over the top
  11. Bake for 30 minutes

Makes 6 servings
