Ingredients
Yield: 4 servings
- 2/3 cup (80 ml) Easy Vegan Pesto (see Easy Vegan Pesto)
- grated zest and juice of 1 lemon
- 4 cups (160g) chopped broccoli rabe or other green(s) of choice
- ¼ teaspoon salt
Method
- Heat the pesto with the lemon juice and zest in a large frying pan over medium heat
- Add the chopped greens and sprinkle with the salt
- Cover and cook for 5 minutes, until the greens have wilted to about half their original volume
- Stir to coat the greens in the pesto
- Cover and cook for another 5 to 10 minutes, until the leaves and stems are tender
- Transfer to a serving dish to enjoy
- Refrigerate in a tightly sealed container for up to 3 days
- To reheat – Place in a small frying pan over low heat for about 5 minutes, until the desired temperature is reached
