Keto Lemon Pesto Greens Recipe

Ingredients

Yield: 4 servings

  • 2/3 cup (80 ml) Easy Vegan Pesto (see Easy Vegan Pesto)
  • grated zest and juice of 1 lemon
  • 4 cups (160g) chopped broccoli rabe or other green(s) of choice
  • ¼ teaspoon salt

Method

  1. Heat the pesto with the lemon juice and zest in a large frying pan over medium heat
  2. Add the chopped greens and sprinkle with the salt
  3. Cover and cook for 5 minutes, until the greens have wilted to about half their original volume
  4. Stir to coat the greens in the pesto
  5. Cover and cook for another 5 to 10 minutes, until the leaves and stems are tender
  6. Transfer to a serving dish to enjoy
  7. Refrigerate in a tightly sealed container for up to 3 days
  8. To reheat – Place in a small frying pan over low heat for about 5 minutes, until the desired temperature is reached
