Keto Cheesecake Recipe


  • 3 packages (8 ounces) cream cheese, softened
  • 1 cup extra-fine whole milk ricotta cheese
  • 1/2 cup sour cream
  • 1 1/2 cups sugar substitute
  • 1/3 cup heavy cream
  • 1 tablespoon no sugar added vanilla extract
  • 1 tablespoon fresh lemon juice
  • 2 eggs
  • 3 egg yolks


  1. Preheat oven to 400F
  2. In a large mixing bowl, beat cream cheese, ricotta, sour cream and sugar substitute
  3. In a separate bowl, whisk together heavy cream, vanilla, lemon juice, eggs, and egg yolks until blended
  4. Pour mixture into cream cheese mixture and beat until just combined
  5. Pour batter into a lightly greased 9 inch springform pan
  6. Place cake pan in a baking pan filled with 1 inch of water
  7. Bake for 15 minutes
  8. Lower temperature to 275F and bake an additional 90 minutes, until top is slightly golden
  9. Cool in unheated oven for 3 hours
  10. Cover and chill overnight
