Lettuce Grape Tomato Salad Avocado Baby Peas Recipe


Makes 4 servings

  • 1 garlic clove, chopped
  • 1 tablespoon chopped shallot
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon sugar
  • 3 tablespoons white wine vinegar
  • 1/3 cup olive oil
  • 1 medium head romaine lettuce, cut into 1/4-inch strips
  • 12 ripe grape tomatoes, halved
  • 1/2 cup frozen baby peas, thawed
  • 8 kalamata olives, pitted
  • 1 ripe Hass avocado


  1. In a blender or food processor, combine the garlic, shallot, basil, salt, pepper, sugar and vinegar until smooth
  2. Add the oil and blend until emulsified
  3. Set aside
  4. In a large bowl, combine the lettuce, tomatoes, peas and olives
  5. Pit and peel the avocado and cut into 1/2-inch dice
  6. Add to the bowl, along with enough dressing to lightly coat
  7. Toss gently to combine and serve
