Low Fat Apple Cider Granita Recipe

Ingredients

  • 4 cups fresh apple cider
  • 1/4 cup sugar
  • 1/4 cup calvados, or other apple brandy
  • 2 tablespoons fresh lemon juice

Method

  1. Put a shallow metal pan in the freezer to chill.
  2. In a bowl, combine cider, sugar, Calvados and lemon juice.
  3. Stir until the sugar dissolves.
  4. Pour the mixture into the chilled pan and place in the freezer.
  5. Every 30 minutes, stir with a fork, crushing any lumps, until the granita is firm but not frozen solid, about 3 hours.
  6. The granita can be made 2 days in advance: freeze and transfer to a covered container.
  7. Before serving, stir to break up large crystals.
  8. To serve, scoop into chilled bowls or goblets.
  9. Makes about 8 cups, for 8 servings.
